We had a great training session this week. Ten new servers went through a four hour round robin, taught by our captains. They learned many hospitality techniques and procedures on providing stellar service.
We had an impressive monthly wedding tasting on Wednesday night, serving 20 prospective brides and grooms. They loved the food and service! May 17, 2012 ******************************

Blue Plate Special is extremely proud and happy to announce the addition of Chef Claudia Wyss to our Culinary team. Wyss is a professionally trained European Chef beginning her life and career in Switzerland. Below are highlights of Chef Wyss’s professional background.
Claudia Wyss, Executive Chef
Growing up, Wyss would prepare family meals with her mother in their household kitchen in Switzerland. Her love of cooking grew from there and at 16 years old she entered into the Swiss Chef School Schaffhausen to start her three-year formal culinary training. While working at a prominent restaurant in Zurich, Chef Wyss’s desire to travel became stronger. In 1991, with nothing to lose and only five hundred dollars in her pocket, she packed her suitcase and headed to Windsor, Canada to work at the Hilton Hotel as the Chef de Partie. Her ventures did not end in Canada as she headed to Puerto Rico to work at the Mayaguez Hilton as Sous Chef. Then in1994, Chef Wyss moved to Chicago to work at the famous Drake Hotel, where she prepared meals for royalty including Princess Diana and the famous Michael Jordon. Chef Wyss moved her culinary skills on to Northwestern University in 2004. While at Northwestern, Wyss cooked for Barack Obama, John McCain and Julia Louis-Dreyfus to name a few. Chef Wyss has also been featured in cookbooks such as The Best of Sodexo, a recipe collection from Sodexo’s finest chefs.

We do whatever it takes, from onsite cooking to traveling for hours in vans loaded with equipment, food and staff, anywhere in New Mexico. We’ve rolled sushi in a meadow, roasted pig at a winery, fried crab cakes in an Albuquerque alley (in the dead of winter no less!), and prepared dinner (for hundreds) in a garage.
